2003 is one of the best vintage produced in Chablis. The old vines (higher than 45 !) give a Chablis Dry and crisp with a cool, clean finish, a unique flinty or mineral flavour.
In France, we said oyster is the Queen, so Chablis is the King.
In fact, when we know the soil of Chablis (Kimmeridgian) composed of thousand of little fossilised oysters, we can understand the perfect harmony with oysters !
Also recommended with aperitifs, starters, white meals and fishes as turbot, sea bass… and mainly cheeses.
